Brasserie des Franches-Montagnes, Saignelégier, Jura, Suisse,
L'Abbaye de Saint Bon-Chien
Strong sour beer aged in wooden barrels.
The cuvée with its amber-red lustre matures for a year in oak barrels that previously contained red wine. The barrels and the resulting spontaneous fermentation give this beer very diverse flavours. The secret of the complexity, the balance and the full-bodied and long-lasting finish is hidden in the assemblage of carefully selected barrels.
On the palate, it is reminiscent of the structure of a fruity red wine with a pronounced balsamic acidity.
Served at 16°C in an elegant goblet, Abbaye de Saint Bon-Chien is an excellent accompaniment to a leg of confit lamb, a Carbonnade Flamande or an Epoisse cheese.
